Ice Brewed Red Tea
I have this red tea from a tea master friend in Yun Nan. It has a nice fruity floral taste, however sometime it is easily to get lost under hot water. So I tried to ice brew it today. This is a easy method to make tea at home.
1. Put a layer of ice at your Gong Dao Bei. Gong Dao Bec is a interim cup, you use to even the tea before distributing to the guests. You can also make this in large bowl if you are having more guests.
2. Put 3 gram of red tea. You can adjust the amount based on your preference.
3. Put another layer of ice on top it.
4. Let it sit for 3-4 hours.
5. Enjoy the tea!
It is just that simple. Because ice brewed tea has less tannin in it, it will taste sweeter than you steep it in the hot water. And it is like guaranteed you will do it right :)
